She just can't believe it ...
I had a feeling last night that Andrew was getting sick. His cheeks & ears were bright red & warm, and his temp was 99.7 degrees. Sure enough when he woke up, he was feeling worse and had a fever. Thankfully it hasn't affected his stomach ... just fever, cough, aches, and such.
And I was actually READY for church for a change! I was going to be ON TIME for Sunday School. I had my casserole & a dessert for the Sunday potluck all prepared on Saturday night - and my stack of paperwork for the church office all organized in a folder ... but instead I am home with my sick boy. It's ok though since I still don't feel 100% myself - I think the glands in my neck are swollen, & it hurts a little when I swallow.
I'm not too sick to enjoy my ACCIDENTAL CASSEROLE that I made last night! I am actually somewhat proud of myself. Usually, I don't make anything unless I have a recipe - and I don't improvise in my cooking at all. But now that I've been determined to learn how to cook better for my family, I am getting adventurous - maybe it's all those hours of FOOD NETWORK I watch during the day??!
My mom has a broccoli - rice - chicken casserole that I like very much. I was going to make it last night, but the recipe calls for cheddar cheese soup, which I don't keep on hand. Sooooooo, I made my own sauce -and it was delicious!! My husband actually ate almost 1/2 the pan of casserole :) Anna & Andrew both declared it "yummy", so I'm reeling in my success as a good cook for a change. :)
I'm sure this isn't a genius recipe that hasn't been made by someone before - but here's my recipe for "Conny's Accidental Casserole"
1 can chicken breast (I get it at Aldi's - for about $1.69), drained & broken up w/ a fork
1 cup cooked rice
10 oz cooked (and drained) frozen broccoli
1 can cream of chicken soup
about 1 can full of water
a splash of milk
5 or 6 or 7 slices American cheese (I can't remember how many I had!)
In a 9x11 (or 9x9) pan, spread cooked broccoli, top with rice, and chicken.
In a pot on stove, put cream of chicken soup, add water & milk. Let come to a gentle boil. Tear slices of cheese into pieces & add to mixture - stir until cheese is melted. Pour mixture over contents of baking pan. I then covered it & put it in the fridge to bake the next day.
You could (and I meant to but forgot) put crumbled Ritz or butter crackers on top. Bake at 350 degrees for 30 minutes.

Hope the munchkins are feeling a little better today. I've been fighting with my teeth since Thanksgiving or somewhat before. I just remember not enjoying Thanksgiving dinner 'cause my teeth hurt. Well, finally on Wednesday we're taking out some of those painful old teeth and I just could not be happier. It is so frustrating... my head is in a fog most the time due to chemicals (advil, tylenol #3 at night, and antibiotics). I hate taking meds anyway.
I think I'll try your brocolli/chicken/rice cassarole, sounds soft and easy to chew.
It was really warm here this past weekend. I started cleaning out the mobile home. Starting with the kitchen. I really ought to get some before and after pictures to post.
It's amazing how dirty a place gets when guys are marching in and out doing constructiony things. I haven't been in there to do any cleaning at all since before we moved the home and that was 3 years ago. The water is not on, but I had a garden hose, then found out the drain is clogged somewhere... hope it's not frozen, so had to bail out the sink and put some antifreeze down there.
Kinda long for a comment, but just catching up. I'll post more on "the blog".
