Yesterday/Wednesday I made this marvelous lasagna for my family. I will admit I got it off some blog somewhere, but I don't know where ... so I can't give credit where credit is due. My review of the recipe is this - easy & yummy but go easy on the salt & pepper (mine was too salty). :)INGREDIENTS:
1 lb. ground beef (or you can use ground turkey, sausage, even seafood like shrimp ... around my parts, you might use some deer meat??!) :)
2 cloves garlic, minced
1 tsp basil
1 tsp oregano
26-28 oz spaghetti/pasta sauce
salt & pepper to taste (my advice - go easy on the s&p)
1 cup chicken stock (I only had BROTH - but it was practically the same)
8 oz cream cheese
12 oz (3 cups) shredded mozzarella
6-8 no-boil lasagna noodles
2-3 cups well-drained veggies like spinach, broccoli, etc (OPTIONAL - I used canned spinach which I have NO IDEA why we had - it was icky!! and slimy!! and I regret I added it)
1 cup grated Parmesan
Heat oven to 400 degrees. Grease a 9x13 pan. Cook beef (or whatever meat you use), garlic, and herbs in a LARGE skillet. Stir in sauce and simmer about 2 minutes.
Season to taste w/ s&p (go easy!!). Set aside.
In medium pan over medium heat, bring chicken broth/stock to boil. Add cream cheese, turn burner to low, and whisk until smooth - about 6 minutes. Season to taste (or don't ... but don't over do it, trust me).
Spoon 1/2 meat mixture into pan evenly. Sprinkle 1 cup mozzarella over meat. Top with 3-4 noodles. Toss on veggies, if using them.
Pour cream cheese sauce over noodles & cover with 1 cup mozzarella. Add 3-4 noodles. Top with remaining meat, then last of mozzarella and Parmesan (I used less than 1 cup parm). Bake until bubbling - about 35-40 minutes. Let cool before cutting for about 10-15 minutes.
