Simple Pleasures

I love days like today - I was home all day - until time to go pick up my kids from school. Somehow my hours at home just fly by - and I look around to make sure I have something to show for it other than just having read a lot of blogs and catching up on facebook! But I did get laundry done and several little things cleaned up.

I finished the day off by having dinner at Cracker Barrel, celebrating the accomplishments of my friend who has earned her ASN (Associates of Nursing)!!! YEAH, KIM!!!! :)

I left my kids & husband one of the easiest meals I know how to make for their dinner.
Tater Tot Casserole:

Brown GROUND BEEF with ONIONS.
Drain fat; add a can of CREAM OF MUSHROOM SOUP with a little water.
Let come to a boil.

In a casserole dish (9x13), place a layer of GREEN BEANS (canned, drained).
Cover with meat mixture.
Cover with SHREDDED CHEDDAR.
Top with thawed TATER TOTS.

Bake at 350 degrees for 20-25 minutes.
Best served w/ ketschup.
